Ok, I admit it without shame. I am known for my pralines. They are delicious, melt in your mouth and before you can count to 10, they add two pounds to each thigh. The recipe is as follows:
Corky’s Pralines
1 ½ sticks of butter

1 ½ cup of skim milk
1 cup of brown sugar
3 cups of white sugar
3 Tablespoons of Karo Syrup (light)
3 pinches of salt
3-4 cups of pecan halves
Put everything in a Dutch oven on top of stove and bring to a boil, stirring the entire time. When you drop a little in a cup of cold water and it forms a ball, you are done. (About 20-25 minutes)
Take off the fire and stir, stir, stir (about 20 minutes) until it begins to harden. Spoon out on wax paper and let dry. If you stir too long, it will crystallize. In that case, dump it back in the pot and start again….

Now the trouble with pralines is that they are addictive. Never make them in hot weather, because you will sweat like you were in a steam shower. Unless your boss wants to take some to her family, in which case you hurry home and cook them right up.....(with a smile).
